Our small size allows us to offer a menu that is always fresh, creative and innovative. Our chef Patrick Germann and his team take pride in using only the freshest ingredients all exclusively prepared in-house. We carefully choose local and regional produce only, including the meat, which is certified organic and fish only from MSC (marine stewardship council) sources.
However, in the spirit of transparency, we will declare where any product is from further afar: such as our organic pasta, which we source from the Goms in the canton of Wallis – because we consider them the best there are. Or the ice cream lollies which are from Gasparini – as they are so wonderfully nostalgic!
